I am from Parallels and I think that I can help you with your Parallels experience.  By default, Parallels Desktop creates its icon in the Dock. If you do not need it, just remove it from the Dock and start Parallels Desktop from /Applications. From the described behavior, you used Express installation mode when creating your virtual machine, which is developed to make it easy for most customers to install Windows. If you do not like some of the features, you can disable them in the configuration (remove Windows applications folder from Dock, disable Shared Folders/Shared Profile).
